Spring Foraging: Ramsons (Wild Garlic)

Spring Spring Spring – perfect time for some suburban foraging.  The little woodland strip on the way to the allotment is currently covered in a carpet of Ramsons also known as wild garlic.

The other weekend I picked a couple of handfuls of this Spring gem and made a fabulous pesto – I’ve been eating it every other day with pasta, or using it as a marinade with chicken and I can’t get enough of it – mmmmm.  I got soaked in the process as it was chucking it down with rain but in my book once you’re a bit wet – a bit more wet is nothing much!

I followed Sarah Raven‘s recipe, it’s well worth a try as its easy to make and tastes so fresh.  I’ve stored mine in the fridge, but I think it should be ok for a month un-opened.
