This recipe is the one my mum uses!
20 large elderflower heads, need to be newly opened ones that are creamy coloured with lots of pollen ans lovely smell, anything that is turning brown will smell like cat pee so be carefull what you choose
1.35k granulated sugar
2 thinly sliced oranges & same with
2 lemons, unwaxed if you can get them
30g of tartaric acid or citric acid (Vit C) I get mine from pharmacy or health food shop (I didn’t use this as I couldn’t get any)
Put sugar and 1.15 litres of water in a pan and fully dissolve sugar and bring to the boil. Add elderflowers and as soon as back to the boil remove from the heat. Pour over the fruit & citric acid while still hot. Cover loosely and leave for 24 hours, I sometimes leave for longer. you may need a bucket, I use my very large mixing bowl. makes 2 250ml bottles, can be kept in fridge but i freeze most to make it last the year.
